One of the only problems that I have with overnight oats and chia seed pudding is that in order to be edible, they have to sit overnight. Now, for most people this is probably not a problem, but for me, I REALLY want to eat it before it is done waiting. Sometimes I really want chia seed pudding, but I don’t want to wait long. My solution is this! It takes just a couple minutes to whip up and doesn’t require any sit time! (By the way, chia seed pudding is a mixture of liquid and chia seeds that sit and create a creamy textured “pudding”)

INGREDIENTS
- 3 T chia seeds
- 1 cup milk (any type will do, but if you are using a non-dairy milk your pudding will come out thinner, you may want to add a tsp more chia seeds)
- 1 T sweetener (maple syrup, honey, sugar, etc.)
- 1/2 tsp vanilla extract (optional)
- 1 T peanut butter (or any nut or seed butter)
- Add ins (such as chocolate chips, chocolate chips, and if you are feeling adventurous, chocolate chips.)
- Blend all ingredients in a blender until evenly mixed. Pour in a mason jar and pop in a fridge and store up to 3 days. Enjoy!
