Yum! Who doesn’t love a freshly baked batch of delicious cookies, the smell of them wafting through the house and summoning you children to crowd around your kitchen table asking how long they have to cool. Nobody, that’s who. However, for many people out there, making cookies is just another temptation to eat the entire batch (ahem, me). Whether you are on a special diet, trying to cut down your calorie intake, or just want a break from those sugary chocolate chip cookies, these cookies are your salvation. I have to give credit to my good friend Faith for inspiration. The best part of these cookies is definitely that you can have your cookies and eat them too, because they are healthy enough to have for breakfast (shh, I won’t tell if you don’t).
INGREDIENTS
- 1 cup rolled oats
- 2 very ripe bananas
- 1/4 cup nut butter (creamy or chunky)
- 2 T honey (or another sticky sweetener if you are vegan)
- (optional) cinnamon, chia seeds, chocolate chips
- Preheat oven to 350°
- Smash bananas until there are very few chunks.
- Stir in peanut butter and honey.
- Fold in oats and add-ins.
- Bake for 10 minutes or until cookies feel firm to the touch.
